Quinoa Broccoli Bites

Soo… I guess you could say I kind of failed.

In my last post I talked about how I was doing the 21 Day Sugar Detox. In a sense, now I’m not.

I started the 21dsd pretty amped up about it, but after three days I was feeling very sick. I had crazy headaches, nothing made me full, and I felt sick to my stomach most of the day.

Ok ok ok. I’m a HUGE baby. I get it. BUT, what you have to realize is that I’ve been extremely ill before and had no other choice than to change my diet. I realized during these measly three days that I don’t want to force myself to do something like this until I feel it’s absolutely necessary. Three days did teach me that I need to be more careful about my sugar intake than I have been lately, and now I’m feeling much better. For someone like me that lifts or works out almost daily, we need those carbs, man!

Sooooo….it’s official. I’m madly in love…with the Pacific Northwest. Don’t worry husband, you came first.

How in the world did it take me so long?! This place is pure MAGIC! My husband and I have been hiking every weekend and each weekend just keeps getting better and better. The people here are pretty awesome as well.

Enough about that! Let’s talk food!

These quinoa bites couldn’t be easier to make and they’re so delicious and packed with protein! I served them with sweet potato fries and they were a hit. Go try for yourself!

Ingredients:

  • 1 cup quinoa, cooked
  • 1/2 cup zucchini, grated
  • 1 cup broccoli, finely chopped
  • 4 egg whites
  • 1 cup grated mozzarella raw cheese (or whatever lactose alternative you’d like)
  • 1 tsp garlic powder
  • sprinkles of salt and pepper
  • cooking spray or olive oil

1. Preheat the oven to 350 degrees. Grease a mini muffin tin with the cooking spray or olive oil.
2. In a large bowl, combine all ingredients. Mix well.
3. Place a heaping tablespoon of the mixture into each muffin mold.
4. Bake for about 15-20 minutes or until golden brown on top. Cool for 5 minutes before removing from tins.
