Protein-Packed Overnight Oatmeal

This is a great recipe to start your week off right.

I have seen many people post about overnight oatmeal, so I decided I had to make some for myself. I must say, this is the BEST way to start your day.

I used to avoid oatmeal, but now find that I love starting my day with it since it’s high in carbs and fiber. You can also add pretty much any ingredient to it to amp up the flavor. I like to add healthy fats and proteins and the occasional chocolate chip.

Again, since I’m in the middle of training season, I wanted to add a good amount of protein, so I added my favorite protein powder. Feel free to mix and match your protein as well!


  • 1/2 cup oats
  • 1 cup light coconut milk
  • 1 tsp chia seeds
  • 1 scoop Garden of Life vanilla chai protein powder
  • 1 Tbsp honey

1. Mix all ingredients together in an airtight container.
2. Let sit in the fridge overnight to thicken.
3. Enjoy the next morning for breakfast!
I topped mine with dry roasted almonds and a tiny extra drizzle of honey with bananas.
