Mondays and Grilled Cheeses

Does anyone else dislike Monday as much as I do?

I don’t like being pessimistic, but the sound of my alarm on a Monday definitely seems angrier than any other day.

Oddly enough, today has been different.

Today I officially started training for the 2014 season.

It’s sunny with a high of 68 and I decided to start the day off right with my quick run.

After 3 minutes, I kid you not, I’m pretty sure my lungs were about to collapse. You know the feeling?

I was immediately frustrated because I’ve been keeping myself in shape with Insanity workouts, sprints, and lifting.

What is the difference?!

Pollen.

Stupid stupid pollen.

Why does such a beautiful time of year have to be so painful to my respiratory system?!

Sadly, the run did not bear well for my lungs, but I made it through and have happily hacked the way through the rest of the day.

Ok. Grilled cheese.

I wanted so badly to take the most mouth-watering picture of this grilled cheese the other night, but I kid you not, I was so in love with it, I took about ten seconds to snap a shot, ate half, then about five seconds to take one other shot. It’s not mouth-watering and I’m sorry.

Oh, but it’s so tasty.

I’m not even going to post a “recipe.”

Anyone can make this. If you’ve ever made bacon or a grilled cheese, you’re fine.

Assemble goat gouda cheese slices (from Trader Joe’s), thinly sliced granny smith apple, and peppered turkey bacon.
I used Udi’s gluten free bread and coconut oil in a hot pan to top it off.

Go make this.

Do it.

Now.
