These cookies actually have nothing to do with Valentine’s… they’re just cookies. Also…drum roll please…these are EGG FREE.
I’m actually not a huge fan of valentine’s to be honest with you. I think it’s an unnecessary forced holiday. Any day should be an excuse to let someone you care about know they’re loved! So, in honor of Valentine’s, Saturday, WHATEVER, these cookies are to make your taste buds feel appreciated. I know mine do. I made these yesterday and I’ve already eaten about half of the batch!
Do any of you like or dislike Valentine’s? What’s your favorite thing to do on this “holiday?”
- 2 cups almond meal, sifted
- 1 cup cashew flour, sifted
- 1/2 tsp baking powder
- 1/4 tsp sea salt (use kosher salt if you don’t like a salty taste in your cookies)
- 1 tsp cinnamon
- 1 cup dark chocolate chunks
- 1/3 cup honey
- 2 Tbsp coconut oil, softened
- 1/2 tsp almond oil
- 1 tsp orange zest (or zest of half an orange)
- 1/4 cup water
Preheat the oven to 350 degrees.
Mix the flours, baking powder, cinnamon, and salt in a large bowl.
Add the chocolate chips and mix in evenly.
In a separate bowl, mix all of the wet ingredients together, including the orange zest.
Add the wet ingredients to the dry and mix well.
Drop rounded teaspoons on a parchment paper lined baking sheet.
Bake for 10-15 minutes, or until slightly browned.
Cool for 5 minutes and then remove from the baking sheet.
