Ok ok ok.
If anyone is like me, a vegetarian not by choice, then you can understand the constant cravings for meat.
I mean, I consistently dream of the day that a juicy hamburger will touch my lips.
Juicy juicy meat.
Anyway! I found this recipe for a vegetarian version of a beef taco and just about died. I honestly didn’t miss the meat! My husband even loved it! And, well, he’s a guy, so he clearly is a fan of beef.
Here you go:
- 1 1/2 cup walnuts
- 2 tsp coconut aminos or Bragg’s liquid aminos
- 1 1/2 tsp cumin
- 2/4 tsp ground coriander
- pinch of cayenne pepper
Blend all ingredients in a food processor. The mixture should hold together slightly. If it’s too crumbly, add more aminos.
Prepare on a bed of spinach with guacamole and fresh salsa.
Trust me, this dish is AMAZING.
