The other day I was in a very herby mood. I was craving anything with cilantro in it, but didn’t want it to be something that I typically make, so I decided to fuse two cuisines together.
This pesto is darn good, if I say so myself and I completely winged it on the spot.
My advice would be to let the pesto sit in the fridge in a few hours or overnight to achieve the best flavor, and I would make sure you eat it within a couple of days because the cilantro will go bad quickly.
Here’s what you’ll need:
- 1 bunch of cilantro leaves
- 1 large handful of spinach (it depends on how cilantro-y you want your pesto to taste)
- 1/4 cup walnuts
- 2 garlic cloves
- 1-2 T extra virgin olive oil
- 1/2 tsp cayenne (you can add more or less depending on how spicy you want it)
- juice of one lime
Place all ingredients in a food processor and blend until smooth.
It doesn’t get easier than that!
