I got this recipe from Dr. Josh Axe.
It’s a very summery light meal that contains just about every good part of the food pyramid.
- I cup cooked quinoa
- 2-3 cups steamed kale
- 1 apple, such as granny smith, diced
- 3-4 T olive oil
- 1/2 lemon juice and peel
- 2 tsp stone ground mustard
- fresh slices of goats mozzarella
Mix the lemon juice and peel with the olive oil, mustard, and olive oil. Layer the kale, quinoa, apple, and quinoa then drizzle with the dressing.
