Summer is drawing near…

Ok, so for those that know me, you know that I really hate summer. Ok, let’s rephrase that…I hate summer in the south. Apparently, I was not bred for the heat, but regardless of my feelings toward the summer, I absolutely adore summer cuisine. You get all of the best fruit of the year, plus you get to use one of my favorite cooking tools… the grill.

Last weekend, my husband and I decided that with all of this beautiful weather we’ve been having, that we needed to treat ourselves with a grilled meal.

We grilled fresh salmon after it had been marinading in a blend of olive oil, lemon, salt, pepper, and dill. We also grilled asparagus in the same marinade, just without the dill.
While Corbin was out grilling, I made a quinoa salad that contained peas, cucumber, celery, olive oil, salt, pepper, and basil that I topped with some goat’s mozzarella.
All of this was to say that I can’t wait for summer cooking.
