Sweet Potato Burger

This…is just amazing.

Even my husband couldn’t believe how great this was.

It’s a spicy yet somewhat sweet burger and will be an amazing addition to my summer recipes.
I got inspired to make this one from yet another recipe I found on Pinterest, but of course I had to had my own inspiration to it to make it extra special for me to make.

Ingredients:

  • 2 small or 1 large sweet potato, baked
  • 1 can garbanzo beans, drained
  • 1/2 cup cooked brown rice
  • 1 T tahini
  • 1 tsp cayenne pepper
  • salt and pepper to taste
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/4 cup almond meal
  • 1 T grapeseed oil

Bake sweet potato, then peel and place in a mixing bowl.

Add drained beans and rice to the mixing bowl. Mash beans, rice, and potato together.

Mash in seasonings. Your mixture will be soft.

Roll the mixture into patty-sized balls and roll in the almond meal.

Meanwhile, add a T of grapeseed oil to a pan and heat on medium heat.

Cook each patty about 5 minutes, or until browned, on each side.

Top with avocado, dijon mustard, spinach, goat cheese, or whatever you enjoy!
