These pancakes are so delicious, especially since the holidays are right around the corner.
Top them with pomegranate seeds or any of your favorite nuts to make a delicious breakfast or snack.
You will need:
- 1 cup gluten-free flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/8 tsp salt
- 1 cup light coconut milk
- 1 1/2 T grapeseed oil
- 1 T agave nectar
- 1 egg
separate these for cooking:
- 1 T coconut oil
- 1 T maple syrup or maple agave
In a large bowl, mix all the dry ingredients together.
In a separate bowl, mix all of the wet ingredients together.
Blend the wet ingredients into the dry and stir until mixed.
In a preheated pan, add 1 T coconut oil and cook about 1/4 cup of batter for about 1 minute on each side, or until golden brown. Top with your favorite toppings and enjoy!
