Holiday Rice

Well, as you can see, I’m really excited about fall and have been making mostly fall-related recipes.
I’m just really excited…

Anyway, this dish tastes very much like the holidays with the notes of orange, cranberry, and cinnamon.
Hope you enjoy!

Ingredients:

  • 1 cup brown rice, cooked
  • 1/2 large yellow onion, diced
  • 6 T vegetable broth
  • 2 ribs of celery, diced
  • 3 green onions, diced
  • 1/3 cup dried cranberries
  • 1 T extra-virgin olive oil
  • zest of 1 orange and juice from 1/2 of that orange
  • 1 T cinnamon
  • handful of walnuts

Sautee onion in vegetable broth.

Cook for 3-4 minutes.

Add celery, green onions, and cranberries.

Cook 2 minutes on medium heat.

Remove from pan and set aside.

Add olive oil to the pan and heat.

Add rice.

Lower the heat and stir in the orange zest, juice, vegetables, and cinnamon.

Simmer for one minute.

Serve with toasted walnuts.
