Ok, so I made this recipe a few years ago, but this weekend I revisited it by making just a few tweaks and actually taking some pictures!
- 1 yellow onion, chopped
- 1 rib of celery, chopped
- 1 T coconut oil
- 1 apple, peeled, cored, and diced (I used a honeycrisp)
- 1 butternut, peeled, cored, and diced
- 3 cups vegetable broth
- pinches of cinnamon, nutmeg, salt, and pepper
Combine the onion, celery, and coconut oil in a large saucepan on medium heat.
Cook for about 5 minutes, or until all is softened.
Add the butternut, apple, and broth.
Bring to a boil.
Simmer 10 minutes until everything is soft.
Add to a blender and add the spices.
Blend until smooth and add spices to taste.
