This was a delicious fall treat. You have all the elements of comfort food with this dish and you can enjoy it for any meal of the day!
You will need:
- 2 cups butternut, peeled, cored, and cubed
- 1/4-1/2 red onion, sliced
- 1 T extra virgin olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 large eggs
- 1/3 cup almond milk
- 1 T chopped sage (or dried)
- 1/2 cup goat’s mozzarella, shredded
Preheat oven to 425.
While the oven heats, put the squash and onion in an ovenproof skillet.
Toss with olive oil, salt and pepper.
Roast in the oven about 25 minutes, stirring occasionally.
Set aside to cool slightly.
In a bowl, whisk eggs, milk, sage, more salt and pepper.
Pour into skillet and return to the oven.
Cook 6-10 minutes, or until eggs are set.
Remove and sprinkle with goat cheese.
Turn on broiler and cook until cheese is brown, about 1-2 minutes.
