If you like a warm, earthy soup, you’ll love this dish.
This week I’ve been experimenting with apples and this is the best I’ve come up with!
- 1 large turnip, peeled and diced
- 2 gala apples, peeled, cored, and diced
- 1 1/2 cup vegetable broth
- 1 T extra virgin olive oil
- 1/2 tsp thyme
- 1/2 tsp rosemary
Add first three ingredients to a medium saucepan.
Bring to a boil.
Reduce heat to medium, cover slightly, and cook for 12 minutes.
Add contents to a blender.
Add oil and herbs and blend.
