Apple, Tuna, and Avocado Quesadilla

This was a quick idea I threw together, but it turned out quite tasty!

You will need:

  • 2 brown rice tortillas
  • 1 packet or small can of albacore tuna, I use the kind in olive oil
  • 1/4 cup mozzarella rice cheese
  • 1/4 cup chopped cilantro
  • 1/2 apple, sliced (I used honeycrisp)
  • 1/2 avocado, sliced
  • 1/2 cup spinach
  • sprinkle of cracked pepper

Heat a large pan or panini grill.

Layer all ingredients on a tortilla, then place the other tortilla on top.

Heat in panini grill for about 3-5 minutes or until slightly golden brown.

If using a pan, heat each side for about 3 minutes, until brown.
