Oatmeal Apple Pancakes and Egg Hash


This is a yummy and healthy breakfast.

You will need:


  • 1 cup oatmeal
  • 1/2 cup cinnamon applesauce (sugar-free is best)
  • 1 egg
  • 2 T agave nectar
  • 2 T Grade B maple syrup


  • 4 eggs
  • 2 yukon gold potatoes, diced
  • large handful of baby spinach
  • 1 T paprika
  • salt and pepper
  • 1/4 cup rice cheese
  • 1 T grapeseed oil

In a blender, blend oatmeal, applesauce, egg and syrup until mixed well. Cook in a hot pan until golden brown, about 3-5 minutes for each side.

In a large skillet, heat grapeseed oil with the potatoes.
After about a minute, add all of the spices.
Cook until the potatoes begin to brown and can be poked easily with a fork.
Add the eggs, spinach and rice cheese.
Cook until the eggs are scrambled.
