Avocado and Pesto Panini

This is so great, especially with my cucumber soup recipe.

You will need:

  • 1 avocado, peeled and sliced
  • 2 T homemade pesto (check out my earlier recipe)
  • 1/2 red onion, sliced
  • handful of baby spinach
  • 1 T goat mozzarella, sliced
  • 4 pieces of gluten-free bread, like Udi’s

On the bread, spread pesto on each slice. Layer with spinach, avocado, onion, and cheese.

Place on a preheated panini maker or in a preheated pan.

Cook each side until golden brown, about 3-5 minutes.
