This is incredibly refreshing and keeps for about a week.
You will need:
- 1 cup cooked quinoa
- 1/2 cucumber, diced
- 2 or 3 stalks of celery, diced
- 1/2 cup frozen peas
- 1 T coconut aminos
- 1/2 orange, juiced
- 1/2 lemon, juiced
- 1 T basil, chopped
- 1 T mint, chopped
Right after the quinoa is cooked, pour it into a bowl and immediately add the peas.
This will thaw them completely.
Add the rest of the ingredients and stir until everything is incorporated.
If there’s something missing, add more basil or orange juice.
It’s all about the taste, but this way I found to be very delicious!
