Smoked Salmon Pizzettes

This is probably one of my favorite recipes to date… just sayin’.

You will need:

  • 2 gluten-free english muffins, halved
  • 1/4 cup shredded smoked salmon
  • 1/4 cup spinach
  • 2 T goat cheese
  • 1 red onion, sliced
  • 1 T grapeseed oil
  • 1 tsp agave nectar
  • 1 T sundried tomato pesto (from an earlier post)

In a pan, heat grapeseed oil.
Add onions and agave and stir together.
Reduce the heat to low and cover.
Cook about 45 minutes, or until the onions are soft and reduced.
On each muffin half, spread pesto, spinach, caramelized onions, smoked salmon, and goat cheese.
Bake in a 375 oven for about 5-7 minutes, or until the cheese is melted.
