Green Beans w/ Mustard Vinaigrette


I pulled this from Cooking the Whole Foods Way.

You will need:

  • 1 bag, or roughly 1 lb of green beans
  • 2 T stone-ground mustard
  • 1 T extra-virgin olive oil
  • 1 garlic clove, pressed
  • 1 T brown rice syrup
  • 1 tsp rice vinegar
  • 1 tsp umiboshi vinegar
  • 1/2 of one lemon, juiced
  • salt and pepper
  • pinch of dried thyme

Bring pot of water to a boil. Add green beans and cook until green and tender, about 2 minutes.
Mix the rest of the ingredients together to make a vinaigrette and pour on the green beans.
