Fennel Avocado and Orange Salad


I wanted to embrace the flavors of spring, and this salad definitely did.


  • 1/2 bunch steamed kale
  • 1/2 naval orange, peeled and segmented
  • 1/2 avocado, diced
  • 1/2 fennel bulb, diced
  • 1 T stone ground mustard
  • 1 T olive oil
  • 1 T balsamic vinegar
  • salt and pepper

Mix the last four ingredients in an air-tight container, then arrange salad, pouring the vinaigrette on top.
So easy, and so good for you!
