Stuffed Peppers


This is a delicious recipe.
A meal all in one go!
(Although, I would recommend serving with some greens.)


  • 2 bell peppers, cored
  • 1 cup uncooked quinoa
  • 8 oz organic vegetable broth
  • 1 cup water
  • 1/4 cup green onions, chopped
  • 1/4 cup raw walnuts, chopped
  • 1/4 cup crumbled goat cheese
  • 1/4 cup parsley, chopped
  • 1 tsp lemon zest
  • 1 T thyme
  • pinch of sea salt, cracked pepper

In a pot, bring vegetable broth and water to a boil. Add quinoa. Simmer covered 20 mins.
Remove from the stove and put in a bowl.
Add green onions, walnuts, parsley, zest, and spices. Mix well.
Stuff peppers with the mixture layering with goat cheese.
Place peppers in a deep baking dish filled with about 1/2 inch of water or less. (enough to cover the bottom)
Cover dish roughly with aluminum foil.
Bake at 350 for 20 mins.
Remove foil and bake again for 10 mins.
Remove and eat while it’s hot!
