Vegetable Kale Salad

This was very much on a whim, but very delicious and super nutritious!

Ingredients:

  • 1/2 bunch steamed kale
  • sliced red bell pepper
  • black olives, pitted
  • crumbled goat cheese
  • 1 T dijion mustard
  • 1 tsp umiboshi vinegar
  • 1 T olove oil

Mix the last three ingredients to make the dressing. Layer kale, peppers, olives, and goat cheese then drizzle dressing on top.
I served mine with an apple, carrot, ginger drink.

SO good for you!
