Rice Pudding


This is another original recipe that I decided to create on a whim and it turned out delicious!

You will need:

  • 1 cup cooked brown rice
  • 1 13 oz can coconut milk
  • 1 tsp agave nectar
  • 1/4 cup raisins
  • 1 tsp cinnamon
  • 1 egg, beaten
  • 1/2 tsp orange zest

Put cooked brown rice in a pot with 1/2 of the can of coconut milk and the agave. Cook for about 15 minutes, stirring occasionally on low heat until the rice becomes thick.

Then, add the rest of the coconut milk and the raisins. Cook for 2 minutes. Finally, add the cinnamon and orange zest. Remove from heat and serve hot. Delicious as a dessert or breakfast treat! Very healthy filling option and super tasty!
