Chocolate Chip Zucchini Bread

This is gluten-free, dairy free, and sugar free, and 100% DELICIOUS!

I found this recipe in Cooking Light and decided that I wanted to cater it to my needs and here’s what I got:

Ingredients:

  • 3/4 cup honey
  • 2 tbsp grapeseed oil
  • 2 large eggs
  • 1 cup applesauce
  • 2 cups gluten-free flour
  • 2 tbsp unsweetened cocoa powder
  • 1 1/4 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups finely shredded zucchini
  • 1/2 cup bittersweet chocolate chips (or unsweetened… i use the dairy-free kind)
  • oil to grease the pan

Preheat oven to 350. Place first three ingredients in a large bowl and beat with a mixer on low until well blended. Add applesauce.

Combine flour and next 4 ingredients in a bowl. Add flour mixture to sugar mixture, beating until moist (it might be very runny, but don’t mind that). Stir in zucchini and chips.

Spoon batter into a loaf pan greased with oil. Bake at 350 for 1 hour (or less!) until a toothpick comes out clean. Cool for 10 minutes before removing and serve warm or at room temperature.

Side note: If you’re going to leave it out for more than a couple of days, I would refrigerate it. The natural healthy stuff goes bad quicker, so keep it fresh in the fridge and just heat it up or eat it cold!
