Hearty Burrito

Made this for my 4th of July night!
It’s very hearty and nutritious.

You will need:

  • 1 tortilla (sprouted or whole grain, unbleached flour if you can have gluten)
  • 1 cup cooked brown rice
  • 1 can organic black beans
  • 1/2 avocado
  • shredded rice cheese
  • sliced almonds
  • cumin
  • garlic powder
  • salt and pepper
  • 1/2 lime (juice)
  • grapeseed oil

Heat the beans in a pan on med-low heat and add cumin and garlic powder to taste. In a tortilla, add the rice, then beans and cheese. In a separate bowl, mix avocado, lime juice, cumin, salt, and pepper. Add to burrito. Place almonds on top. In a skillet, heat some grapeseed oil on med heat. Wrap up burrito and fry until the tortilla turns golden brown. Eat while it’s hot.
